Butterfly pea flowers are native to Thailand where they are traditionally used in hot tea or as a refreshing iced drink called Nam Dok Anchan. Butterfly pea flowers can be used as an intense natural blue colour for drinks, starches (rice, noodles or pasta), dairy and baked goods. It naturally changes colour from deepest clue to bright pink depending on the pH of the food or beverage.
